Banana bread...

or what's left of it after being subjected to taste-test at home

The recipe called for just bananas and the usual stuff (flour, butter, egg, sugar, etc.) but i decided to mix in some chopped nuts for added texture.

Sometimes, improvisation puts a nice (in this case, delicious!) twist on ordinary things!

Now please excuse me as i do my research for some more quick bread recipes.

I guess i had too much time on my hands yesterday, being stuck at home because of the stormy weather.

I don't mind staying at home, if it means doing something worthwhile like making food and sharing them with the housemates. But please spare me from the dreary weather.

and the name was Frank

Public storm signal #3 is up in Metro Manila and neighboring provinces and cities.

Last night, i had a hard time falling asleep because of the strong gust of wind (yup, one can hear the "blowing" sound of it) and the disturbing sound of house's roofs that one would think they will be blown away any moment. I was paranoid that i might wake up in our 2nd floor room sans the roof!

Then i remember this parody of a tagalog Christmas song i used to hear as a kid (and yeah, i'm also guilty of singing this tune):

Tuwing sasapit ang bagyo
Lumilipad ang mga yero...

I got up by lunchtime and looked outside to see that the street was already flooded. Thank God it didn't reach inside the house as it usually does when a heavy downpour occurs.

But when i read the news today, oh boy! (hehe! Beatles!) hundreds of families were displaced by floods in Metro Manila.

Typhoon Frank (international codename: Fengshen) left a significant portion of Metro Manila flooded, leaving several thoroughfares impassable to traffic and people, and displacing some 850 families from their homes.

I'm more fortunate than them. And yet i sometimes complain about the house being flooded from inside the bathroom! I should be thankful that i'm still in our house.... and blogging about it.... with all the usual homely comforts that an evacuation center cannot provide.

'nuff said.

Pretty Little Seashells

These are clams (we call them halaan in tagalog)



After washing them carefully, they are sauteed with garlic, onion, and ginger.
Then add a little water and salt to taste.
Do not overcook or the meat will shrink.


After enjoying the dish, you can be creative with the shells.

Peanut Butter Cookies

I cheated last time. But i said i might do something real.

So, here it is!


Butter is creamed for two minutes.
White and brown sugar is added then creamed again for another two minutes.


Mix in the peanut butter and egg.


Flour, baking soda, baking powder and salt are mixed together
and stirred into the sugar-butter mixture.


Dough is then wrapped in plastic and placed in the fridge for at least 3 hours.


Dough is shaped into 1 1/4 inch balls, placed about 3 inches apart on lined cookie sheet and flattened in crisscross pattern with a fork. Bake until light brown in 375degrees.


Cool on baking sheets for a minute.


And let cookie monster enjoy it!

Back to School!

Today marks the first day of school for most students here in the Philippines, but some kids had already attended their classes since last week--my bro included.

Summer vacation's over, they're all back to school.

I say, tapos na ang maliligayang araw nila! ;p (their happy days are over! hehehe)

But then I, too, was not spared.

Waaaaaaahhh!

My supervisor had me enrolled in one of the universities here in Manila to take up Master in Public Administration.

The course runs for 12 months and classes are conducted every Tuesday. I'll be relieved from my office work during classes; tuition and other school fees will be shouldered by the office but i'm gonna have to render service obligation for a year once i finish my schooling.

Hmm.... sounds fair enough for me.

But in the event that i did not finish my schooling (knock on wood!) due to health reasons or grade failure and/or resign from my present job without fulfilling my service obligation, i'm obliged to return the amount of money the office have spent for my schooling.

Tapos na ang maliligayang araw ko.

We just had our first day of class today and i must admit that i had to adjust to being a student again. Medyo kinalawang na ang mga turnilyo! Hehehe!

I miss my cooking class already.

I haven't been attending class for a couple of weeks now and I'm afraid i might have to sacrifice this class to make way for bigger responsibilities at work.

Camera Tricks!


My First Time

in baking, that is!

It all started with a careless remark. I was walking along the streets of Binondo with a colleague when we passed by a store that sold oatmeal raisin cookies and she expressed her desire to buy some. Then i blurted out "pag-aralan ko nga gawin yan para sa'yo."

Or perhaps deep inside, i've been wanting to do it but i was just too proud to admit because it was my sister who was the first to be recognized as "the baker" in the family. And then my brother followed suit with his brownies (and he has already perfected them!). I have been contented in being the one who (occasionally) cooks viands and makes puto and pichi-pichi during special occasions.

But something's been bugging me to try what my siblings have done. I may not be as good as them, but i thought that if i tried--even for just one time, at least i have satisfied my itch to do something i've never done before.

But my brother said i'm a cheater. Because i made it using a pre-mixed pack bought at Duty Free during my trip to Subic.

I admit. I cheated. But i only did it because i don't want the food to be wasted if ever i failed in baking and also because i want to build my confidence first.

Next time, i might try something real.

Grande Island

Grande Island is a tourism island estate located in Subic Bay, Philippines. It houses the Grand Island Resort, a property that is operated by GFTG Property Holdings Corporation.

Grande Island's total land area is 40 hectares, of which 14.2 hectares are being developed as a world-class resort location. The remaining 25.8 hectares are forest areas. The island is accessible by ferry and is approximately 20 to 30 minutes away from the Subic Bay mainland.

The office people (including me, of course!) went to the island for a Teambuilding activity and for the Bureau's StratPlan. Of course, we squeezed in some fun activities as well! This is what we called "huling hirit sa tag-init."

see that black bag? Inside it are working documents for upcoming training programs and courses we are going to conduct and/or facilitate. Yup, we brought along work-related stuff. Work+Play=Fun! Hehehe!

Nevertheless, we did have fun and enjoyed the environment--the blues and greens, the beach, the breeze, the sunset, the sunrise. We seized every opportunity to live for the moment and do all the recreational activity that the island has to offer. It's not everyday that one can go to such place.

This memory is priceless
